Burdock root, also known as the Gobo root, is classified as a herb. It is however also considered a weed in much North America. It is cold tolerant and grows vigorously, up to 3m high. With large floppy leaves, the plant gets a tall flower stalk, which shoots every second year, producing purple flowers. The roots, as well as stalks and leaves, are used for medicinal and culinary purposes.
